Get your daily greens in with this delicious salad that has the perfect combination of flavors and textures. From the flavorful strawberries and almonds to the sweet dried cranberries and feta cheese finally ending with the spinach leaves dressed in a house-made savory tang.
Strawberry and Spinach Salad with Agave Balsamic Vinaigrette
- 10 oz baby spinach
- 1 cup sliced strawberries
- 1 cup almonds, toasted
- 1/2 cup dried cranberries
- 4 oz feta cheese, crumbled
- 1/2 small red onion, sliced into thin strips (optional)
Balsamic Vinaigrette Dressing
- 1/4 cup balsamic vinegar
- 1 tablespoon Agave nectar
- 1/2 cup olive oil
- Salt and ground black pepper to taste
For the dressing, begin by stirring the balsamic vinegar and agave together in a bowl. Whisk the ingredients together while slowly adding the olive oil. Add the salt and pepper to season. Then in a large salad bowl, toss together spinach, strawberries, almonds, cranberries, feta cheese and optional red onion. Drizzle your desired amount of dressing over the salad and toss to evenly coat then serve immediately.
